Preheat the oven to 350° F.
Chop the ham, bell pepper, and onion into small pieces. Sauté onion in a skillet with a small bit of butter until translucent. Add ham and bell pepper and sauté together briefly. Let cool,
Crack eggs into a bowl; add salt, pepper, and chili powder. Whisk until combined.
Add the ham, onion, bell pepper and cheddar cheese and stir to combine.
Spray a 12 muffin cup pan (1 standard size muffin tray) with cooking spray.
Spoon the mixture into the muffin pan..
Bake until puffy and just barely set, ~25 mins.
Run a knife around the edges of each muffin cup and lift the bites out of the pans.
Serve warm or at room temperature.
