Greek Cucumber Cups

- 4 large cucumbers
- ½ cup cherry tomatoes quartered
- ½ cup Kalamata olives chopped
- ½ cup crumbled feta
- 2 TBS chopped fresh dill plus more for garnish
- 2 tsp lemon juice
- 2 tsp squeeze garlic
- 1 tsp extra-virgin olive oil
- 1 tsp dried oregano
- Salt & black pepper to taste
Cut cucumbers into 1-1/2” pieces. Using a melon baller or spoon, create a well in each cucumber.
In a large bowl, combine tomatoes, olives, feta, dill, lemon juice, garlic, olive oil and oregano and stir until combined. Season with salt and pepper.
Spoon salad mixture into cucumbers. Garnish with more dill if desired and serve.
