Place eggs, water, flour and salt in mixer bowl. Attach bowl and flat beater and cover so flour doesn't fly out. Turn to speed 2 and mix for 30 to 60 seconds. Start with 2 TBS water. Add more water if the dough is too dry, in small increments.
Change out the flat beater for the dough hook. Turn to speed 2 and knead for 2 mins. The dough should begin sticking to the hook if it's the right consistency.
Remove the dough and knead by hand for 2 mins. Form the dough into a disc/ball, place plastic wrap over the top of the dough, and let it rest for at least 25 mins.
Form dough into whatever pasta is being created.
When boiling fresh pasta, it only needs 3-5 mins to cook.
