Put the nuts in food processor and pulse until finely chopped but not pasty. Transfer to a skillet over medium heat; cook, stirring frequently, until the nuts are lightly browned and fragrant, ~5-6 mins. Pour the nuts into mixing bowl.
Place the onion, garlic, bell pepper, jalapeño pepper, and cilantro in the food processor (no need to clean it first). Pulse until it is finely minced but not puréed. Press out as much liquid as possible then add to the bowl with the nuts.
Add the lamb and spices then use hands to mash the mixture together until combined.
Form the mixture onto the skewers like hot dogs. Grill over medium heat ~8-10 mins until internal temperature is 160º F.
