Place garlic cloves in foil. Sprinkle with olive oil, then seal foil like a pouch. Grill on BBQ for ~ 4 mins each side – until cloves darken and soften.
In a large skillet, heat 1 TBS oil over medium-high heat. Add orzo; cook and stir 2-3 mins or until lightly browned. Add stock; bring to a boil. Reduce heat; simmer, covered, 10-12 mins or until orzo is tender and liquid is absorbed.
Stir in cream cheese until melted. Add spinach, Asiago cheese, milk, salt and roasted garlic; cook and stir until spinach is wilted.
