Creamy Roasted Garlic & Spinach Orzo

Ingredients
  

  • 15 peeled garlic cloves
  • 1 tsp + 1 TBS olive oil divided
  • cups uncooked whole wheat orzo pasta
  • cups chicken stock
  • ½ package ~4 oz reduced-fat cream cheese, cubed
  • 5 oz fresh spinach trimmed and chopped
  • ½ cup shredded Asiago cheese
  • ¼ cup fat-free milk
  • ½ tsp salt
  • 2 TBS minced fresh parsley as garnish

Instructions
 

  • Place garlic cloves in foil. Sprinkle with olive oil, then seal foil like a pouch. Grill on BBQ for ~ 4 mins each side – until cloves darken and soften.
  • In a large skillet, heat 1 TBS oil over medium-high heat. Add orzo; cook and stir 2-3 mins or until lightly browned. Add stock; bring to a boil. Reduce heat; simmer, covered, 10-12 mins or until orzo is tender and liquid is absorbed.
  • Stir in cream cheese until melted. Add spinach, Asiago cheese, milk, salt and roasted garlic; cook and stir until spinach is wilted.
  • Garnish with fresh parsley.
