Creamy Roasted Garlic & Spinach Orzo
Elegant but easy side dish to dress up dinner!
Ingredients
- 15 peeled garlic cloves
- 1 tsp + 1 TBS olive oil divided
- 1¾ cups uncooked whole wheat orzo pasta
- 2½ cups chicken stock
- ½ package ~4 oz reduced-fat cream cheese, cubed
- 5 oz fresh spinach trimmed and chopped
- ½ cup shredded Asiago cheese
- ¼ cup fat-free milk
- ½ tsp salt
- 2 TBS minced fresh parsley as garnish
Instructions
- Place garlic cloves in foil. Sprinkle with olive oil, then seal foil like a pouch. Grill on BBQ for ~ 4 mins each side – until cloves darken and soften.
- In a large skillet, heat 1 TBS oil over medium-high heat. Add orzo; cook and stir 2-3 mins or until lightly browned. Add stock; bring to a boil. Reduce heat; simmer, covered, 10-12 mins or until orzo is tender and liquid is absorbed.
- Stir in cream cheese until melted. Add spinach, Asiago cheese, milk, salt and roasted garlic; cook and stir until spinach is wilted.
- Garnish with fresh parsley.
