Primavera Chicken Breasts

Marinade
- 2 TBS soy sauce
- 2 TBS lemon juice
- 2 TBS balsamic vinegar
- 2 TBS Worcestershire sauce
- 2 TBS brown sugar
- 1 TBS Dijon mustard
- 1 TBS Italian seasonings
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp pepper
- 1 tsp red pepper flakes
- 4 boneless skinless chicken breasts
- 3 bell peppers yellow, red, green
- extra-virgin olive oil
- Italian seasoning
- Salt & pepper
- 1½ cups finely shredded mozzarella cheese
- Marinara and freshly parsley for serving
Mix marinade ingredients together. Cut 4-6 slits in each chicken breast, being careful not to cut through completely. Soak chicken in marinade for 4-8 hrs.
Pre-heat oven to 400° F.
Season chicken breasts and inside slits with Italian seasoning, salt, and pepper.
Cut the bell peppers into pieces to fit inside the slits in the chicken. Stuff each the slits with 1 or 2 pieces of bell pepper.
Drizzle with oil and top with mozzarella.
Bake for ~25 mins until internal temperature is 165° F.
Serve over Marinara sauce and garnish with fresh parsley.
