Primavera Chicken Breasts

Ingredients
  

Marinade

  • 2 TBS soy sauce
  • 2 TBS lemon juice
  • 2 TBS balsamic vinegar
  • 2 TBS Worcestershire sauce
  • 2 TBS brown sugar
  • 1 TBS Dijon mustard
  • 1 TBS Italian seasonings
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp red pepper flakes
  • 4 boneless skinless chicken breasts
  • 3 bell peppers yellow, red, green
  • extra-virgin olive oil
  • Italian seasoning
  • Salt & pepper
  • cups finely shredded mozzarella cheese
  • Marinara and freshly parsley for serving

Instructions
 

  • Mix marinade ingredients together. Cut 4-6 slits in each chicken breast, being careful not to cut through completely. Soak chicken in marinade for 4-8 hrs.
  • Pre-heat oven to 400° F.
  • Season chicken breasts and inside slits with Italian seasoning, salt, and pepper.
  • Cut the bell peppers into pieces to fit inside the slits in the chicken. Stuff each the slits with 1 or 2 pieces of bell pepper.
  • Drizzle with oil and top with mozzarella.
  • Bake for ~25 mins until internal temperature is 165° F.
  • Serve over Marinara sauce and garnish with fresh parsley.
