Primavera Chicken Breasts
Elegant and pretty, but easy baked chicken dish for a nice dinner party
Ingredients
Marinade
- 2 TBS soy sauce
- 2 TBS lemon juice
- 2 TBS balsamic vinegar
- 2 TBS Worcestershire sauce
- 2 TBS brown sugar
- 1 TBS Dijon mustard
- 1 TBS Italian seasonings
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp pepper
- 1 tsp red pepper flakes
- 4 boneless skinless chicken breasts
- 3 bell peppers yellow, red, green
- extra-virgin olive oil
- Italian seasoning
- Salt & pepper
- 1½ cups finely shredded mozzarella cheese
- Marinara and freshly parsley for serving
Instructions
- Mix marinade ingredients together. Cut 4-6 slits in each chicken breast, being careful not to cut through completely. Soak chicken in marinade for 4-8 hrs.
- Pre-heat oven to 400° F.
- Season chicken breasts and inside slits with Italian seasoning, salt, and pepper.
- Cut the bell peppers into pieces to fit inside the slits in the chicken. Stuff each the slits with 1 or 2 pieces of bell pepper.
- Drizzle with oil and top with mozzarella.
- Bake for ~25 mins until internal temperature is 165° F.
- Serve over Marinara sauce and garnish with fresh parsley.
