Smoked Salmon Bites

- 7 oz sliced smoked salmon
- 8 oz lite cream cheese room temperature
- 1 TBS non-fat half-n-half
- 1 TBS capers
- 2 TBS chopped fresh dill plus extra to garnish
- salt and pepper to taste
- 2 tsp parsley
- 1 TBS or juice from ½ lemon
- 1 cucumber – sliced into coins
Place the cream cheese in a mixing bowl and add the cream and capers. Drizzle in a splash of the caper brine.
Add the dill, salt & pepper, parsley and lemon juice. Mix until well combined.
Slice the smoked salmon into thin strips using a pizza cutter.
On each cucumber coin, spread a dab of the cream cheese mixture, then arrange the salmon strip in circular rings to resemble a “rose”.
Top each piece with a few sprigs of fresh dill.
