Smoked Salmon Bites

Ingredients
  

  • 7 oz sliced smoked salmon
  • 8 oz lite cream cheese room temperature
  • 1 TBS non-fat half-n-half
  • 1 TBS capers
  • 2 TBS chopped fresh dill plus extra to garnish
  • salt and pepper to taste
  • 2 tsp parsley
  • 1 TBS or juice from ½ lemon
  • 1 cucumber – sliced into coins

Instructions
 

  • Place the cream cheese in a mixing bowl and add the cream and capers. Drizzle in a splash of the caper brine.
  • Add the dill, salt & pepper, parsley and lemon juice. Mix until well combined.
  • Slice the smoked salmon into thin strips using a pizza cutter.
  • On each cucumber coin, spread a dab of the cream cheese mixture, then arrange the salmon strip in circular rings to resemble a “rose”.
  • Top each piece with a few sprigs of fresh dill.
