large zucchini
2
medium sweet potato
peeled

small beet roots
olive oil spray
All-Purpose Seasoning

paprika

onion powder

garlic powder

basil

parsley

tsp
oregano

tsp
black pepper

eggs
fresh parsley for garnish
Instructions
Preheat oven to 375ºF.
Use spiralizer to cut your vegetables.
Mix All-Purpose Seasoning with vegetable spirals in a bowl gently by hand.
Spray a 6-cup ‘mega-muffin’ pan with olive oil spray. Fill muffin cups with vegetables.
Bake at 375ºF for 30 mins.
Remove pan from oven and carefully form a small pocket in the center of each nest. Crack an egg into the middle of each nest.
Return to oven and bake for an additional 10-15 mins until egg white is cooked but yolk is still a little loose.
Remove individual nests from pan. Garnish with parsley and serve immediately.
