Spiralized Roasted Vegetable Nests

Ingredients
  

  • 3 large zucchini
  • 2 medium sweet potato peeled
  • 3 small beet roots
  • olive oil spray

All-Purpose Seasoning

  • 2 TBS paprika
  • 1 TBS salt
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • tsp basil
  • tsp parsley
  • tsp oregano
  • 1 tsp black pepper
  • 4 eggs
  • fresh parsley for garnish

Instructions
 

  • Preheat oven to 375ºF.
  • Use spiralizer to cut your vegetables.
  • Mix All-Purpose Seasoning with vegetable spirals in a bowl gently by hand.
  • Spray a 6-cup ‘mega-muffin’ pan with olive oil spray. Fill muffin cups with vegetables.
  • Bake at 375ºF for 30 mins.
  • Remove pan from oven and carefully form a small pocket in the center of each nest. Crack an egg into the middle of each nest.
  • Return to oven and bake for an additional 10-15 mins until egg white is cooked but yolk is still a little loose.
  • Remove individual nests from pan. Garnish with parsley and serve immediately.
