Spiralized Roasted Vegetable Nests
Cool presentation for a healthy vegetable side dish
Ingredients
- 3 large zucchini
- 2 medium sweet potato peeled
- 3 small beet roots
- olive oil spray
All-Purpose Seasoning
- 2 TBS paprika
- 1 TBS salt
- 2 tsp onion powder
- 2 tsp garlic powder
- 1½ tsp basil
- 1½ tsp parsley
- 1½ tsp oregano
- 1 tsp black pepper
- 4 eggs
- fresh parsley for garnish
Instructions
- Preheat oven to 375ºF.
- Use spiralizer to cut your vegetables.
- Mix All-Purpose Seasoning with vegetable spirals in a bowl gently by hand.
- Spray a 6-cup ‘mega-muffin’ pan with olive oil spray. Fill muffin cups with vegetables.
- Bake at 375ºF for 30 mins.
- Remove pan from oven and carefully form a small pocket in the center of each nest. Crack an egg into the middle of each nest.
- Return to oven and bake for an additional 10-15 mins until egg white is cooked but yolk is still a little loose.
- Remove individual nests from pan. Garnish with parsley and serve immediately.
