Chicken Corn Chowder

Ingredients
  

  • 1.5 lb chicken tenders cut into 1” pieces
  • 1 lb baby potatoes cut into 1” pieces
  • 2 cups carrots 7 oz, chopped
  • 2 cups celery 12 oz, chopped
  • 2 red bell peppers seeded, chopped
  • 2 leeks white end – cleaned, chopped
  • ¾ cup onion 4 oz. chopped
  • 3 cups frozen corn 16 oz
  • 1 can 4.5 oz chopped Hatch green chiles
  • 8 oz cream cheese cut into cubes
  • 2 cups chicken broth
  • 2 cups 2% milk
  • 3 TBS butter
  • 1 TBS sugar
  • Salt and pepper to taste
  • Toppings: crumbled cooked bacon chopped fresh parsley

Instructions
 

  • In slow cooker, mix all ingredients together.
  • Cook on HIGH heat setting about 4 hrs or on LOW heat setting 8 hrs.
  • Season to taste with salt and pepper.
  • Garnish individual bowls of chowder with parsley and bacon as desired.
