Acorn Squash with Pepitas
Hearty Winter squash side dish with sweet and salty tones
Ingredients
- 1 acorn squash
- 4 TBS melted butter
- 1 TBS brown sugar
- ¾ tsp smoked paprika
- ¾ tsp salt
- 3 TBS Pepitas pumpkin seeds
Instructions
- Pre-heat oven to 425°F.
- Cut acorn squash in half. Remove seeds and empty cavity.
- Slice into ~1-inch-thick crescent wedges.
- Toss with melted butter and spices.
- Spread out on foil-covered cookie sheet and bake in oven for ~35 min.
- Sprinkle with pepitas and roast 5 more mins. Season with salt.
