Acorn Squash with Pepitas

Ingredients
  

  • 1 acorn squash
  • 4 TBS melted butter
  • 1 TBS brown sugar
  • ¾ tsp smoked paprika
  • ¾ tsp salt
  • 3 TBS Pepitas pumpkin seeds

Instructions
 

  • Pre-heat oven to 425°F.
  • Cut acorn squash in half. Remove seeds and empty cavity.
  • Slice into ~1-inch-thick crescent wedges.
  • Toss with melted butter and spices.
  • Spread out on foil-covered cookie sheet and bake in oven for ~35 min.
  • Sprinkle with pepitas and roast 5 more mins. Season with salt.
