Hatch Green Chile Chicken Posolé

Ingredients
  

  • 1 cup onion diced
  • 2 poblano peppers cored and diced
  • 2 small jalapeno peppers sliced remove seeds
  • 2 TBS garlic squeeze tube
  • 8 oz mild hatch green chiles canned
  • 6 cups chicken stock
  • 2 15.5oz cans white hominy (drained and rinsed)
  • ~2½ lb boneless chicken ~3 breasts
  • 2 tsp cumin
  • 1 TBS salt

Toppings / garnish

  • avocado diced
  • lime wedges
  • cilantro chopped
  • cotija cheese crumbled
  • cabbage shredded

Instructions
 

  • Add all of the ingredients except the garnish to slow cooker.
  • Cook on low for 8 hours.
  • Shred the chicken with 2 forks before serving.
  • Garnish with toppings of choice, squeezing a little lime juice into each bowl.
