Hatch Green Chile Chicken Posolé
Easy, flavorful Mexican soup with fun add-ins
Ingredients
- 1 cup onion diced
- 2 poblano peppers cored and diced
- 2 small jalapeno peppers sliced remove seeds
- 2 TBS garlic squeeze tube
- 8 oz mild hatch green chiles canned
- 6 cups chicken stock
- 2 15.5oz cans white hominy (drained and rinsed)
- ~2½ lb boneless chicken ~3 breasts
- 2 tsp cumin
- 1 TBS salt
Toppings / garnish
- avocado diced
- lime wedges
- cilantro chopped
- cotija cheese crumbled
- cabbage shredded
Instructions
- Add all of the ingredients except the garnish to slow cooker.
- Cook on low for 8 hours.
- Shred the chicken with 2 forks before serving.
- Garnish with toppings of choice, squeezing a little lime juice into each bowl.
