Pork Carnitas

Flavor-packed, tender shredded pork which can be used in tacos, enchiladas, or as a topper for baked potatoes

Ingredients
  

  • 5 lbs pork shoulder boneless
  • 1 onion coarsely chopped
  • 10 TBS garlic squeeze tube
  • 1 jalapeño seeded and ribs removed, chopped
  • 1 cup orange juice
  • juice of 2 limes

Rub

  • 2 tsp salt
  • 1 tsp black pepper
  • 2 TBS dried oregano
  • 3 TBS ground cumin

Instructions
 

  • Trim excess fat off the pork shoulder.
  • Combine the rub ingredients then rub all over the pork.
  • Place the pork in a slow cooker, top with the onion, garlic, jalapeño pepper, and pour orange and lime juice on top.
  • Cook on LOW for 8 hrs.
  • The meat should be tender and falling apart. Shred the pork using two forks.
  • Serve in soft tacos or as a topping for baked potatoes
