Pork Carnitas
Flavor-packed, tender shredded pork which can be used in tacos, enchiladas, or as a topper for baked potatoes

- Slow Cooker
Ingredients
- 5 lbs pork shoulder boneless
- 1 onion coarsely chopped
- 10 TBS garlic squeeze tube
- 1 jalapeño seeded and ribs removed, chopped
- 1 cup orange juice
- juice of 2 limes
Rub
- 2 tsp salt
- 1 tsp black pepper
- 2 TBS dried oregano
- 3 TBS ground cumin
Instructions
- Trim excess fat off the pork shoulder.
- Combine the rub ingredients then rub all over the pork.
- Place the pork in a slow cooker, top with the onion, garlic, jalapeño pepper, and pour orange and lime juice on top.
- Cook on LOW for 8 hrs.
- The meat should be tender and falling apart. Shred the pork using two forks.
- Serve in soft tacos or as a topping for baked potatoes
