Chicken Satay
Inspired by our time living in Indonesia – great as a meal or appetizers with a spicy peanut sauce
Ingredients
- 1 1/2 lbs chicken breasts skinless and boneless cut into strips
Marinade
- ¼ cup coconut milk
- 2 TBS rice vinegar
- 2 TBS soy sauce
- 1 TBS canola oil
- 2 TBS garlic squeeze tube
- 1 TBS ginger squeeze tube
- 2½ tsp yellow curry powder
- 2 tsp turmeric
- 2 TBS brown sugar
- dash of ground paprika & white pepper
Peanut Sauce
- 3 TBS creamy peanut butter
- 2 TBS soy sauce
- 2 TBS lime juice
- 1 tsp brown sugar
- 3 tsp chili garlic sauce
- 2 tsp ginger squeeze tube
Instructions
Marinade
- Combine and blend all ingredients in food processor until smooth paste.
- Marinade chicken tender strips in paste for 4-6 hrs.
- Thread onto skewers and grill over high heat.
Peanut Sauce
- Whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl.
