Chicken Satay

Inspired by our time living in Indonesia – great as a meal or appetizers with a spicy peanut sauce

Ingredients
  

  • 1 1/2 lbs chicken breasts skinless and boneless cut into strips

Marinade

  • ¼ cup coconut milk
  • 2 TBS rice vinegar
  • 2 TBS soy sauce
  • 1 TBS canola oil
  • 2 TBS garlic squeeze tube
  • 1 TBS ginger squeeze tube
  • tsp yellow curry powder
  • 2 tsp turmeric
  • 2 TBS brown sugar
  • dash of ground paprika & white pepper

Peanut Sauce

  • 3 TBS creamy peanut butter
  • 2 TBS soy sauce
  • 2 TBS lime juice
  • 1 tsp brown sugar
  • 3 tsp chili garlic sauce
  • 2 tsp ginger squeeze tube

Instructions
 

Marinade

  • Combine and blend all ingredients in food processor until smooth paste.
  • Marinade chicken tender strips in paste for 4-6 hrs.
  • Thread onto skewers and grill over high heat.

Peanut Sauce

  • Whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl.
