Pollo Asado
Marinated Mexican grilled chicken with great flavor
Ingredients
- 4 chicken breasts
Marinade
- ½ cup orange juice
- ¼ cup lime juice
- 2 TBS olive oil
- 2 TBS garlic squeeze tube
- 2 TBS achiote paste
- 1 TBS cumin
- 1 TBS coriander
- 1 TBS salt
- 2 tsp oregano Mexican is best
- 2 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp chipotle chile pepper
Instructions
- Whisk all of the Marinade ingredients together in a large bowl or freezer size plastic bag. Reserve a small portion for later basting.
- Add chicken and turn to coat. Marinate in the refrigerator at least 4 hrs and up to overnight.
- Let chicken sit at room temperature for 20-30 minutes before cooking..
- When ready to grill, remove the chicken from the bag letting excess marinade drip off. Grill for ~5 mins per side or until chicken is cooked through.
