Marinated Mexican grilled chicken with great flavor

Ingredients
  

  • 4 chicken breasts

Marinade

  • ½ cup orange juice
  • ¼ cup lime juice
  • 2 TBS olive oil
  • 2 TBS garlic squeeze tube
  • 2 TBS achiote paste
  • 1 TBS cumin
  • 1 TBS coriander
  • 1 TBS salt
  • 2 tsp oregano Mexican is best
  • 2 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp chipotle chile pepper

Instructions
 

  • Whisk all of the Marinade ingredients together in a large bowl or freezer size plastic bag. Reserve a small portion for later basting.
  • Add chicken and turn to coat. Marinate in the refrigerator at least 4 hrs and up to overnight.
  • Let chicken sit at room temperature for 20-30 minutes before cooking..
  • When ready to grill, remove the chicken from the bag letting excess marinade drip off. Grill for ~5 mins per side or until chicken is cooked through.
