Moroccan-Spiced Cauliflower Bites
Tasty cauliflower bites dipped in Turmeric-Yogurt Sauce
Ingredients
Cauliflower
- 1 lb cauliflower cut into bite-sized florets
- ¼ tsp black pepper
- ½ tsp cumin
- ½ tsp dried thyme
- ½ tsp salt
- 1 tsp turmeric
- 1 TBS extra-virgin olive oil
Turmeric-Yogurt Sauce
- 2 tsp lemon juice
- 1 tsp turmeric
- 1 TBS extra-virgin olive oil
- 2 tsp maple syrup
- ¼ tsp ground black pepper
- ½ cup non-fat plain Greek yogurt
- 1 TBS squeeze garlic
Instructions
Cauliflower
- Preheat oven to 425º F.
- In a large mixing bowl, combine all ingredients and cauliflower. Toss to coat evenly.
- Spread cauliflower out on foil-lined baking sheet and roast for 18-20 mins until cauliflower is tender and beginning to brown.
- Serve with Turmeric-Yogurt sauce.
Turmeric-Yogurt Sauce
- In a medium bowl, whisk all sauce ingredients until uniformly yellow. Transfer to a serving bowl and refrigerate until serving.
