Moroccan-Spiced Cauliflower Bites

Ingredients
  

Cauliflower

  • 1 lb cauliflower cut into bite-sized florets
  • ¼ tsp black pepper
  • ½ tsp cumin
  • ½ tsp dried thyme
  • ½ tsp salt
  • 1 tsp turmeric
  • 1 TBS extra-virgin olive oil

Turmeric-Yogurt Sauce

  • 2 tsp lemon juice
  • 1 tsp turmeric
  • 1 TBS extra-virgin olive oil
  • 2 tsp maple syrup
  • ¼ tsp ground black pepper
  • ½ cup non-fat plain Greek yogurt
  • 1 TBS squeeze garlic

Instructions
 

Cauliflower

  • Preheat oven to 425º F.
  • In a large mixing bowl, combine all ingredients and cauliflower. Toss to coat evenly.
  • Spread cauliflower out on foil-lined baking sheet and roast for 18-20 mins until cauliflower is tender and beginning to brown.
  • Serve with Turmeric-Yogurt sauce.

Turmeric-Yogurt Sauce

  • In a medium bowl, whisk all sauce ingredients until uniformly yellow. Transfer to a serving bowl and refrigerate until serving.
