Chicken Corn Chowder
Easy to prepare soup loaded with vegetables and chicken in a tasty broth
Ingredients
- 1.5 lb chicken tenders cut into 1” pieces
- 1 lb baby potatoes cut into 1” pieces
- 2 cups carrots 7 oz, chopped
- 2 cups celery 12 oz, chopped
- 2 red bell peppers seeded, chopped
- 2 leeks white end – cleaned, chopped
- ¾ cup onion 4 oz. chopped
- 3 cups frozen corn 16 oz
- 1 can 4.5 oz chopped Hatch green chiles
- 8 oz cream cheese cut into cubes
- 2 cups chicken broth
- 2 cups 2% milk
- 3 TBS butter
- 1 TBS sugar
- Salt and pepper to taste
- Toppings: crumbled cooked bacon chopped fresh parsley
Instructions
- In slow cooker, mix all ingredients together.
- Cook on HIGH heat setting about 4 hrs or on LOW heat setting 8 hrs.
- Season to taste with salt and pepper.
- Garnish individual bowls of chowder with parsley and bacon as desired.
