Margarita Cheesecake

Lime (and tequila!) flavors in a creamy cheesecake with strawberries on top!

Ingredients
  

Crust

  • cups graham cracker crumbs
  • ½ cup butter melted

Filling

  • 3 8 oz packages reduced-fat cream cheese, room temperature
  • cups lite sour cream
  • ¾ cup sugar
  • 3 TBS Grand Marnier
  • 3 TBS gold tequila
  • 3 TBS freshly squeezed lime juice
  • 4 large eggs
  • Green food coloring
  • Topping
  • ¾ cup lite sour cream
  • 1 TBS freshly squeezed lime juice
  • 1 TBS sugar
  • Garnish w/strawberries & lime slices

Instructions
 

Crust

  • Pre-heat oven to 350º F. Melt butter and mix with graham cracker crumbs. Spray 9” springform pan with PAM and press crumb mixture into bottom and side. Bake for 8 mins. Cool and refrigerate.

Filling

  • Beat cream cheese until fluffy. Beat in sour cream, then sugar, Grand Marnier, tequila and lime juice. Then beat in eggs and add ~10 drops of green food coloring.
  • Pour filling into crust. Bake at 350º F until outside 2” are set and center moves only slightly when pan is shaken (~ 50 mins). Remove from oven. Turn oven off.
  • Whisk sour cream, lime juice and sugar together. Spread over top of cheesecake. Return pan to oven (off) for 45 mins.
  • Refrigerate at least 1 day before serving. Decorate top with strawberries and limes.
