Margarita Cheesecake
Lime (and tequila!) flavors in a creamy cheesecake with strawberries on top!
Ingredients
Crust
- 2½ cups graham cracker crumbs
- ½ cup butter melted
Filling
- 3 8 oz packages reduced-fat cream cheese, room temperature
- 1¼ cups lite sour cream
- ¾ cup sugar
- 3 TBS Grand Marnier
- 3 TBS gold tequila
- 3 TBS freshly squeezed lime juice
- 4 large eggs
- Green food coloring
- Topping
- ¾ cup lite sour cream
- 1 TBS freshly squeezed lime juice
- 1 TBS sugar
- Garnish w/strawberries & lime slices
Instructions
Crust
- Pre-heat oven to 350º F. Melt butter and mix with graham cracker crumbs. Spray 9” springform pan with PAM and press crumb mixture into bottom and side. Bake for 8 mins. Cool and refrigerate.
Filling
- Beat cream cheese until fluffy. Beat in sour cream, then sugar, Grand Marnier, tequila and lime juice. Then beat in eggs and add ~10 drops of green food coloring.
- Pour filling into crust. Bake at 350º F until outside 2” are set and center moves only slightly when pan is shaken (~ 50 mins). Remove from oven. Turn oven off.
- Whisk sour cream, lime juice and sugar together. Spread over top of cheesecake. Return pan to oven (off) for 45 mins.
- Refrigerate at least 1 day before serving. Decorate top with strawberries and limes.
