Southwestern Rainbow Carrots
Colorful, flavorful side dish of carrots with a kick
Ingredients
- ~3 lbs rainbow carrots
- 3 TBS olive oil
- ½ tsp ground cumin
- ½ tsp salt
- 1/4 tsp chipotle chili powder
- chopped cilantro. For garnish
Instructions
- Pre-heat oven to 425°F.
- Trim green carrot tops to ~1-2” in length, then cut each carrot in half lengthwise.
- Toss carrots with olive oil and spices.
- Spread out on foil-covered cookie sheet and bake in oven for ~25 min.
- Sprinkle with chopped cilantro.
