Moroccan Spiced Pork Tenderloin

Middle Eastern seasoned grilled pork loin with great flavor

Ingredients
  

  • 1 TBS ground coriander
  • 1 TBS ground cumin
  • 1 TBS ground ancho chile powder
  • 1 TBS light brown sugar
  • ½ tsp ground cinnamon
  • 1 tsp salt
  • ¼ tsp black pepper
  • 1 1¼ lb pork tenderloin

Instructions
 

  • In a small bowl, combine all of the spices and mix thoroughly.
  • (dry) Rub the mixture all over the pork and let sit, covered at room temperature for 1 hour or refrigerate for 4 hrs. Return to room temperature before grilling.
  • Grill the pork over moderately high heat, turning every ~3 mins. Cook until the internal temperature is 145°, about 10-12 mins. Transfer to a cutting board and let sit for ~10 mins.
  • Serve with warm grilled naan, grilled haloumi cheese and yogurt sauce.
