Palak Paneer

Traditional Indian spinach and paneer cheese dish to scoop with Naan bread!

Ingredients
  

  • 1 bag 16 oz frozen chopped spinach
  • 1 medium tomato
  • 5 TBS garlic squeeze tube
  • 1 TBS ginger squeeze tube
  • 2 TBS chopped jalapeño
  • 2 TBS vegetable oil
  • 1 large onion finely chopped
  • 1 tsp garam masala
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • salt to taste
  • 3 TBS half-n-half
  • Squeeze of lemon juice
  • ~ 12 oz paneer cheese cut into cubes

Instructions
 

  • Microwave spinach in glass dish ~6 mins.
  • Add 1 TBS oil to non-stick pan and sauté paneer cheese cubes in until browned on sides. Remove from heat.
  • In same pan, add 1 TBS oil and 2 TBS garlic. Sauté for few mins then add onions. Cook for 2-3 mins until soft and translucent.
  • Add cooked spinach to a blender, along with tomato, 3 TBS garlic, ginger and jalapeño chili. Purée to a smooth paste.
  • Add the spinach purée to pan. Cover & cook for 10 mins on medium heat. Stir regularly.
  • Add the garam masala, turmeric powder, red chili powder and salt. Mix and cook for 1 min.
  • Add the half-n-half and mix to thicken. Let the curry simmer for 3-4 mins. Add paneer cubes to pan and add splash of lemon juice.
  • Serve Palak Paneer hot with Naan bread.
