Orange Chili Shrimp with Snow Peas

Ingredients
  

  • 2 small navel oranges sliced in circles
  • 8 cloves garlic thinly sliced
  • 4 tsp grated fresh ginger
  • 4 TBS soy sauce
  • 4 small heads baby Bok choy leaves separated
  • 12 oz snow peas trimmed
  • 32 peeled deveined, uncooked white shrimp*
  • 4 tsp chili garlic sauce
  • Sliced scallions and toasted sesame seeds for serving
  • * Alternatively can use 4 small boneless skinless chicken breasts, cut into bite-size pieces

Instructions
 

  • Preheat oven to 425° F or an outdoor grill to medium-high. Tear off (4) 12″ squares of foil and arrange on two baking sheets.
  • Divide half of the orange slices among the 4 pieces of foil. Place the garlic, ginger on top then arrange snow peas and Bok choy on top.
  • Place the shrimp in a bowl and mix with chili sauce. Place on top of the vegetables.
  • Drizzle soy sauce on top, then place remaining orange circles on the very top.
  • Cover each of the 4 foil pieces with another piece of foil and seal by folding each edge up and over three times.
  • Roast or grill (covered) for 15-17 mins.
  • Transfer each packet to a plate. Using scissors or a knife, cut an “X” in the center and fold back the triangles. Sprinkle with scallions and sesame seeds.
