Grilled Harissa Shrimp Skewers with Basil Oil and Cilantro
Spicy, colorful, fun shrimp skewers – can be a meal or an accompaniment
Ingredients
Shrimp Skewers
- 1 lb raw shelled and de-veined shrimp
- ¼ cup Mina Mild Harissa plus more for basting
- salt
- freshly ground black pepper
- fresh cilantro leaves
Basil Oil
- 1 cup extra virgin olive oil
- 1½ oz fresh basil leaves
- ¼ tsp + 1/8 tsp salt
Instructions
- Toss shrimp in bowl with harissa, cover the bowl with plastic wrap, and allow the shrimp to marinate in the fridge for 1-2 hrs. Allow to rest at room temperature for 20-30 mins before grilling.
- Place the oil, basil leaves, and salt in a blender and blend until smooth. Place in an airtight container and store in the refrigerator until ready to use.
- Using small wooden skewers, thread 4-5 shrimp on each skewer. Lightly season the shrimp with salt and pepper.
- Grill skewers for 2-3 mins on each side –brushing the shrimp with additional harissa as you grill them.
- Drizzle the shrimp skewers with basil oil and garnish with fresh cilantro leaves.
