Queen Elizabeth-II’s Favorite Cake

Ingredients
  

Cake [makes (1) 6” Springform cake]

  • ½ of a 300g package 150g or ~5 oz McVities Rich Tea biscuits
  • 6 TBS softened unsalted butter
  • 0.4 cup caster sugar
  • 3.5 oz dark chocolate 90% cocoa solids, chopped

Chocolate Ganache

  • 3.5 oz dark chocolate 90% cocoa solids, chopped
  • 1/2 cup heavy whipping cream
  • Shaved white chocolate and raspberries for decoration on top

Instructions
 

  • Butter a 6″ springform pan and line with a circle of parchment paper in the bottom.
  • Break the tea biscuits into small pieces (~ ½-1” size).
  • Cream the butter & sugar together until light & fluffy.
  • Melt the chocolate in the microwave. Once melted, pour over the butter and sugar mixture. Add biscuit pieces and mix thoroughly so all of the biscuits are covered and coated with chocolate.
  • Put the mixture into the prepared pan, and make sure to press down firmly to create an even texture/surface on the bottom. Place the cake into the fridge and allow to chill for at least 4-6 hrs.
  • Chocolate ganache: Put the chopped chocolate into a bowl. Heat the whipping cream in a pan to a simmer then pour over the chocolate and mix well, stirring all the time until the chocolate has melted.
  • Remove the cake from the fridge and place on a wire rack with something underneath to catch excess.
  • Pour the ganache over the cake, making sure it is all coated, including the sides of the cake. Allow to set and cool, before serving. Decorate top with shavings.
