Udon Noodle Stir-Fry

Great skillet noodle dish with sweet sesame ginger sauce

Ingredients
  

  • 14 oz extra firm tofu cut into triangles
  • 2 TBS sesame oil
  • 1 cup carrot cut into matchsticks
  • 1 red bell pepper sliced thin
  • 3 cup broccoli florets cut into pieces
  • 14 oz Udon noodles

Sweet Sesame Ginger Sauce

  • 2 tsp olive oil
  • 3 TBS garlic squeeze tube
  • 1 TBS ginger squeeze tube
  • ¼ cup soy sauce
  • 1 TBS honey
  • 1 TBS sesame seeds

Garnish

  • 2 green onions chopped
  • sesame seeds & Sriracha sauce

Instructions
 

  • Spray a large skillet with PAM and put over medium heat. Add the tofu and cook until brown, 4-5 mins per side. Put the tofu aside.
  • In same skillet, sauté the carrots, bell peppers, and broccoli until cooked through, about 5 mins. Set aside with tofu.
  • Whisk together the ingredients for the sauce.
  • Cook the Udon noodles according to the package directions. Then add the noodles to the pan along with the sauce. Toss until coated.
  • Add back the tofu and vegetables and stir fry for about 5 more mins, stirring constantly.
  • Remove from heat and serve. Top with green onions and sesame seeds. Add Sriracha for spicy flavor.
