Chicken Lo Mein

Ingredients
  

Sauce

  • 2 TBS brown sugar
  • 8 TBS soy sauce
  • 2 TBS oyster sauce
  • 2 tsp hoisin sauce
  • 2 tsp ground black pepper
  • 2 tsp sesame oil
  • 1 cup chicken stock
  • 1 1/2 lb chicken breasts skinless and boneless cut into small pieces
  • 1 TBS ginger squeeze tube
  • 2 TBS garlic squeeze tube
  • 1 red bell pepper sliced
  • 3-4 cups Asian cabbage/ carrot/vegetable mix medley
  • 6 oz Lo Mein noodles
  • green onions sliced for garnish

Instructions
 

  • Mix sauce ingredients together; set aside. Reserve ¼ for extra serving at table.
  • Cook the Lo Mein noodles 1 min shy of the directions. Drain and toss with sesame oil in a bowl to coat.
  • Season chicken with salt & pepper and cook in pan with oil over medium-high heat about 4-5 mins. Remove and set aside.
  • Add the bell pepper, garlic and ginger to the pan and cook until fragrant.
  • Add the sauce and the cabbage/ carrot/vegetable mixture and stir-fry.
  • Return the cooked chicken to the pan and add the cooked noodles. Cook for 3 mins, until everything is well-coated in the sauce.
  • Serve garnished with green onions and extra sauce on the side.
