Chicken Lo Mein
Traditional Lo Mein meal in a bowl with great veggies and flavor
Ingredients
Sauce
- 2 TBS brown sugar
- 8 TBS soy sauce
- 2 TBS oyster sauce
- 2 tsp hoisin sauce
- 2 tsp ground black pepper
- 2 tsp sesame oil
- 1 cup chicken stock
- 1 1/2 lb chicken breasts skinless and boneless cut into small pieces
- 1 TBS ginger squeeze tube
- 2 TBS garlic squeeze tube
- 1 red bell pepper sliced
- 3-4 cups Asian cabbage/ carrot/vegetable mix medley
- 6 oz Lo Mein noodles
- green onions sliced for garnish
Instructions
- Mix sauce ingredients together; set aside. Reserve ¼ for extra serving at table.
- Cook the Lo Mein noodles 1 min shy of the directions. Drain and toss with sesame oil in a bowl to coat.
- Season chicken with salt & pepper and cook in pan with oil over medium-high heat about 4-5 mins. Remove and set aside.
- Add the bell pepper, garlic and ginger to the pan and cook until fragrant.
- Add the sauce and the cabbage/ carrot/vegetable mixture and stir-fry.
- Return the cooked chicken to the pan and add the cooked noodles. Cook for 3 mins, until everything is well-coated in the sauce.
- Serve garnished with green onions and extra sauce on the side.
