Grilled Vegetables Marinade
Balsamic marinade makes these sliced vegetables taste great!
Ingredients
- 1/3 cup olive oil
- 3 TBS honey
- 3 TBS balsamic vinegar
- 2 tsp dried oregano
- 1 tsp garlic powder
- ¼ tsp black pepper
- dash salt
- 3 yellow squash cut into thin slices
- 3 zucchini squash cut into thin slices
Instructions
- In a small bowl, whisk the first seven ingredients. Place marinade in a large Ziploc bag. Add vegetables; seal bag and turn to coat. Marinate 1-2 hrs.
- Transfer vegetables to a foil pan, large enough that the slices spread out and not too thick.
- Grill vegetables, over medium heat 8-12 mins or until crisp-tender, turning occasionally.
- When nearly ready, poke holes in bottom of foil pan to allow liquid to drain and crisp the vegetables on bottom.
