Moroccan Chicken Brochettes
Middle Eastern spiced chicken with tangy garlic sauce
Ingredients
- 2 lbs skinless boneless chicken breast/tenders, cut into 2” pieces
- 1 cup plain non-fat Greek yogurt
- 2 TBS olive oil
- 2 tsp paprika
- ½ tsp ground cumin
- 1/8 tsp cinnamon
- 1 tsp crushed red pepper flakes
- zest from 1 lemon
- 2 TBS lemon juice
- 2 TBS squeeze garlic
- 1 ¾ tsp salt
- ½ tsp black pepper
Garlic Sauce
- 2 TBS garlic squeeze tube
- 3 TBS plain yogurt
- ⅓ cup olive oil
- salt
Instructions
Chicken
- Toss chicken pieces with all other ingredients in a medium bowl. Cover and chill at least 2 hrs.
- Prepare grill for medium-high heat. Thread chicken onto skewers. Grill, turning occasionally until done ~8–12 mins.
- Serve with garlic sauce.
Garlic Sauce
- Put garlic in small mixing bowl and gradually whisk in oil. Very gradually whisk yogurt into garlic mixture until emulsified. Salt to taste. Cover and chill.
