Creamy Gnocchi and Chicken Soup
Great creamy and hearty soup with easy potato dumplings using gnocchi
Ingredients
- 1½ lb boneless skinless chicken breasts
- 1½ cups ~7 oz chopped yellow onion
- 6 oz carrots peeled and sliced
- 6 oz celery sliced
- 2 red bell peppers chopped
- 12 oz fresh green beans cut into ½“ pieces
- 2 TBS garlic squeeze tube
- 2 TBS fresh thyme leaves chopped
- 2 TBS fresh rosemary chopped
- Salt & pepper
- 6 cups chicken broth
- 16 oz 2 x 8 oz cream cheese (reduced fat)
- 1 16 oz package gnocchi
- 6 oz fresh baby spinach
Instructions
- In a slow cooker, place chicken on the bottom, then add all ingredients except cream cheese, gnocchi and spinach.
- Cover and cook on low for 8 hrs.
- Remove chicken from slow cooker and shred with two forks. Return chicken to slow cooker. Cut cream cheese into cubes and add to slow cooker along with uncooked gnocchi.
- Cook on high for 45 mins longer.
- Stir to mix cream cheese, then add spinach into soup until wilted. Season to taste and serve.
