Deconstructed Stuffed Chicken
Elegant baked chicken dish – great for a dinner party
Ingredients
- 4 small boneless chicken breasts
- Italian Seasoning
- 2 TBS vegetable oil
- Salt & pepper
- 12 oz baby spinach fresh
- 1 TBS garlic squeeze tube
- ½ cup non-fat half and half
- 1 cup mozzarella cheese shredded
- 8 Calabrian chili peppers drained, chopped into small bits
- 4 slices bacon cooked chopped
- 4 slices Smoked Gouda cheese
Instructions
- Pre-heat oven to 375° F
- Season chicken breasts on both sides with the Italian seasoning and salt & pepper. Place in a baking dish coated with non-stick spray. Bake for ~20 mins.
- Heat oil in a large skillet on medium heat. Add spinach and cook until it starts to wilt. Add garlic and half and half. Bring to boil. Add mozzarella cheese and keep stirring, on high heat, until mozzarella cheese starts to melt. Reduce heat to simmer and keep stirring until spinach mixture is thick.
- Remove baking pan with chicken breasts.. Top each breast with spinach mixture, bacon pieces, Gouda cheese slice, Calabrian chili peppers on top. Return to oven and bake uncovered for ~15 more mins.
