Baked Squash Rings

Ingredients
  

  • 2 lb Delicata squash
  • ¼ cup all-purpose flour
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • 2 large eggs lightly beaten
  • cups panko bread crumbs
  • 2 tsp salt
  • Finely chopped parsley for serving

Garlic-Lemon Sauce

  • ½ cup nonfat Greek yogurt
  • 2 TBS lemon juice
  • 2 TBS garlic squeeze tube
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 450° F.
  • Whisk together the flour, smoked paprika and cayenne in a shallow bowl.
  • Place the eggs in a shallow bowl.
  • Combine bread crumbs and salt in a shallow bowl.
  • Cut the squash in half crosswise, scoop out the seeds and slice into ¼-inch rounds and season both sides with salt & pepper.
  • Working one at a time, dip the squash rings into the flour mixture, then into the eggs and then into the bread crumbs, coating them well.
  • Place squash on foil-lined baking sheet
  • Bake until tender, 18- 20 mins.
  • Whisk together the Lemon-Garlic Sauce ingredients. Serve alongside squash.
