Baked Squash Rings
Crunchy squash side dish that goes great with anything
Ingredients
- 2 lb Delicata squash
- ¼ cup all-purpose flour
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
- 2 large eggs lightly beaten
- 1½ cups panko bread crumbs
- 2 tsp salt
- Finely chopped parsley for serving
Garlic-Lemon Sauce
- ½ cup nonfat Greek yogurt
- 2 TBS lemon juice
- 2 TBS garlic squeeze tube
- salt and pepper to taste
Instructions
- Preheat the oven to 450° F.
- Whisk together the flour, smoked paprika and cayenne in a shallow bowl.
- Place the eggs in a shallow bowl.
- Combine bread crumbs and salt in a shallow bowl.
- Cut the squash in half crosswise, scoop out the seeds and slice into ¼-inch rounds and season both sides with salt & pepper.
- Working one at a time, dip the squash rings into the flour mixture, then into the eggs and then into the bread crumbs, coating them well.
- Place squash on foil-lined baking sheet
- Bake until tender, 18- 20 mins.
- Whisk together the Lemon-Garlic Sauce ingredients. Serve alongside squash.
