
Homemade Pasta using KitchenAid
Basic pasta dough for home made pasta
Equipment
- 1 KitchenAid Stand Mixer
Ingredients
- 3½ cups Semolina flour
- ½ tsp salt
- 4 large eggs beaten
- 4-5 TBS water added 1 at a time
Instructions
- Place eggs, water, flour and salt in mixer bowl. Attach bowl and flat beater and cover so flour doesn’t fly out. Turn to speed 2 and mix for 30 to 60 seconds. Start with 2 TBS water. Add more water if the dough is too dry, in small increments.
- Change out the flat beater for the dough hook. Turn to speed 2 and knead for 2 mins. The dough should begin sticking to the hook if it’s the right consistency.
- Remove the dough and knead by hand for 2 mins. Form the dough into a disc/ball, place plastic wrap over the top of the dough, and let it rest for at least 25 mins.
- Form dough into whatever pasta is being created.
- When boiling fresh pasta, it only needs 3-5 mins to cook.
